今日の鍋
今日で11月終わり、本当に年も押し迫って来ました。と言いながら、いつもと変わらない状況で、仕事の忙殺されています。体調も戻ってきて、寒いときの鍋です。
野菜たっぷりに、白菜、もやし、カブ、シイタケを用意。
メインは定番の鶏挽肉団子。鶏挽肉に、刻んだシイタケ、ネギ、ゆずの皮に、卵を1個。おろしニンニク、おろし生姜を加え、少し薄口醤油を加えてあります。団子をふっくらさせるには卵がキーですね。
ダシは昆布を水から入れておき、アゴダシの粉末を1袋。ここにミリン、お酒を入れて、さらに塩と薄口醤油で味を調えました。
いただくときには市販の紅葉おろし、おろしニンニク、七味を加えて。団子ふっくらで美味いですよ。
ちょっと味を変えて、ほうれん草のごまよごしを。
デザートには次郎柿を。ああー、満足です。
